Vegan Oat and Banana Pancakes

In honor of pancake day, I of course had to post a recipe of my favorite pancakes!
I love making these pancakes on a Saturday or Sunday morning. I must admit, I did finish the full stack in the picture below on my own.
This recipe is based on oat flour and bananas, so not only is it filling, but it's also very nutritious. Oats are actually a great substitute for flour and so easy to make. All is takes is placing the oats in a blender, and then you have oat flour. There's no need to buy overpriced oat flour from the store when you can make your own from rolled oats. I should also mention that the banana taste is not overpowering. I know there are people out there (like myself) who are not the biggest fans of banana flavoring, but the banana in this recipe is there to add sweetness. Once everything is mixed together, it doesn't have a strong banana-y taste.

Prep time: 5 minutes
Cook time: 10 minutes
Serves 1 hungry person or 2 people - double the recipe if you're making pancakes for more people.
Dry Ingredients:
100g ground oats (around 1 cup)
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
Wet Ingredients:
150ml almond milk
1 tsp vanilla extract
1 ripe banana
Instructions:
1. Start by making the oat flour by blending 100g (or 1 cup) of rolled oats in a blender until it turns into a flour. Place in a bowl.
2. In the same bowl, add in the cinnamon, baking powder and a pinch of salt. Stir well.
3. In a blender, add in the almond milk, vanilla extract and a ripe banana. Make sure the banana is ripe as it adds the sweetness!
4. Slowly combine the wet ingredients in with the dry and stir well.
5. Heat a pan over medium/low heat and then grease it with coconut oil or vegan butter. Add around a few tablespoons of the mixture to the pan - I usually fit around 3 small pancakes in the pan at the same time. You can make them larger if you like.
6. Leave it for around 2 minutes and then flip to the other side once you see small bubbles coming to the surface of the pancakes. I ended up making 8 small pancakes but you can make them larger if you like.
7. Stack and top them with berries and maple syrup!
