Chocolate Chip Banana Bread

When you have too many ripe bananas, banana bread is always the answer!

Best served fresh and slightly warm.



Ingredients:

3 ripe bananas

1 flax egg (1 tbsp flax seeds with 3 tbsp water)

1/2 cup coconut sugar

1 tsp baking powder

1 tsp bicarbonate of soda

1/2 tsp ground cinnamon

3/4 cup non-dairy milk

1 1/4 cups rolled oats

2 1/2 cups wholemeal flour (or plain flour)

1/2 tsp vanilla

1/2 tsp salt

Handful of dark chocolate pieces


Instructions:

1. Preheat oven to 180 C or 350 F.

2. In a small bowl, mix together 1 tbsp flax with 3 tbsp water and leave aside.

3. In a large mixing bowl, mash in 3 bananas and then add in the non-dairy milk, vanilla, coconut sugar, baking powder, bicarbonate of soda, cinnamon, salt and mix.

4. Add in the rolled oats, flour and mix.

5. Fold in the flax egg and dark chocolate chunks.

6. Line a loaf tin with coconut oil and pour in the batter. Bake for 45 minutes until the top is golden brown .
