Almond Butter, Chocolate Covered Dates

To me, medjool dates are nature's candy. Heaven on earth! It's my absolute favorite snack as it completely satisfies my sweet tooth. Now stuff it with smooth, runny almond butter and cover it in melted chocolate, and it's on a whole other level of delicious! The perfect after-dinner treat.


If you can, I would recommend using medjool dates. They are larger in size and have a rich, caramel-like sweetness to them with a soft, chewy texture. If I'm not eating them as a snack, I will often bake with them, using it as a natural sweetener (in place of sugar). It's also great to use as a natural sweetener to your porridge/oatmeal.

Ingredients:

10 Medjool dates

Smooth, runny almond butter (my favorite brand is Pip & Nut)

50g dark chocolate (around half a block of chocolate)

Pinch of salt (optional)


Instructions:

1. Start by removing the stone from each date.

2. Add 1 tsp of almond butter inside each date.

3. Melt the chocolate by adding it to a bowl and stirring over a small pot of boiling water until melted.

4. Drop your stuffed date into the melted dark chocolate and cover fully.

5. Pinch of salt over each date (optional).

6. Place in the fridge for at least 20 - 30 minutes. Enjoy!
