Homemade Granola

Granola is something I eat almost daily for breakfast. It's my favorite when paired with coconut yogurt and fruit, or sprinkled on top of warm oatmeal/porridge. Since I can remember, I've been buying pre-made granola from the grocery store which can end up being quite pricey. I can't believe it took me this long to realize I can create my own at home! It's so simple to do yourself and you end up saving money that would otherwise be spent on overpriced granola.
If using every day, it ends up lasting about a week. You can be as creative as you'd like and substitute any of my ingredients for your own preferred ingredients based on what you already have at home.


INGREDIENTS
For the dry:
2 1/2 cups rolled oats
1 cup puffed quinoa (you could also use puffed rice)
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
Pinch of salt
For the wet:
1/4 cup maple syrup
1/4 cup smooth, runny almond butter
1/4 cup coconut oil (melted)
1 tsp cinnamon
1 tsp vanilla extract
To add in the end:
1/2 cup raisins
1/2 cup coconut flakes
1 tbsp hemp seeds
1 tbsp flax seeds
INSTRUCTIONS:
Preheat oven to 160C or 320F.
In a large mixing bowl, add in the dry ingredients: rolled oats, puffed quinoa, sunflower seeds, pumpkin seeds and pinch of salt.
In a separate bowl, add in the wet ingredients: maple syrup, almond butter, melted coconut oil, cinnamon and vanilla extract. Stir together.
Once the wet ingredients have been stirred, add into the large bowl with the dry ingredients. Mix well until all of the dry ingredients are coated.
Add to a large baking tray, spreading evenly and place in the oven.
Bake for 30 minutes total, stirring halfway through.
Add in the raisins and coconut flakes in the last 2 - 3 minutes before it's done.
Once done baking, add in the hemp & flax seeds. Stir. Keep it stored in a jar and enjoy!
