Apple and Banana Muffins

It seems like all I do is bake these days with so much time at home! If you have ripe bananas and apples that need to be used, then this is the recipe for you.


Makes 12

Baking time: 25 minutes


Ingredients:

3 ripe bananas

2 apples (I used red)

3 tbsp coconut milk (from a tin)

3 tbsp coconut oil (melted)

230g (1 1/2 cups) spelt flour or plain flour

150g (1 cup) coconut sugar

1/2 tsp cinnamon

1 tsp baking powder

1 tsp bicarbonate of soda

Pinch of salt


Instructions:

1. Preheat the oven to 200 C or 390 F.

2. Mix the dry ingredients in a bowl - flour, coconut sugar, cinnamon, baking powder and bicarbonate of soda. Mix.

3. In a separate bowl, mash the bananas and then add the wet ingredients - coconut oil and coconut milk (try to get the thick, creamy bit of the coconut milk that sits at the top of the carton).

4. Add the wet ingredients to the dry and gently combine.

5. Peel and core 1 of the apples and cut into small cubes. Add to the mixture and stir.

6. Grease a 12 hole muffin tray or line it with cases and add the batter.

7. Before placing the muffin tray in the oven, peel and core the second apple, cut it in half and then thinly slice them. Place 2 or 3 slices on the top of each muffin, sprinkling some extra cinnamon on top.

8. Bake in the oven for 25 minutes.
