Vegan French Toast

What's better than french toast when you're craving something sweet for breakfast?
This french toast recipe is a new one we tried this morning to satisfy our sweet tooth! It's the perfect weekend breakfast and so simple to make.
The most important part of this recipe is the bread you use. Make sure you're using a spongy, yet sturdy kind of bread so that it won't fall apart easily after soaking.

Ingredients
(Serves 2)
- 6 slices of sourdough bread
- 1 ripe banana
- 1 cup almond milk (or other plant milk of choice)
- 1 tbsp maple syrup
- 1 tbsp ground flaxseed
- 1 tsp vanilla extract
- 1 tsp cinnamon
- a pinch of nutmeg
- a pinch of salt
Instructions
1. Blend all of the above ingredients (except bread) together and pour into a baking tin or large bowl.
2. Preheat a pan over medium heat to make sure it's hot before cooking.
3. Soak each slice of bread for a couple of seconds on each side.
4. Place in the pan, cooking on both sides until golden brown.
5. Once all pieces are cooked through, top with some maple syrup and fruits of choice! I love topping mine with strawberries and blueberries!
