Maple Cinnamon Oatmeal

This is my favorite go-to oatmeal recipe whenever I want a warming, filling breakfast. The measurements for this recipe feeds 1 person, so if you're making oatmeal for 2, just double the measurements!



(Serves 1)

Ingredients:

1/2 cup oats

1/2 cup water

1/2 cup non-dairy milk

1 tbsp chia seeds

1 tbsp maple syrup

1 tsp vanilla

1/2 tsp cinnamon


Toppings:

A dollop of coconut yogurt (or non-dairy yogurt of choice)

Handful of granola to sprinkle

Handful of goji berries

Drizzle of almond butter

Chopped fruit of your choice

1 tbsp maple syrup


Directions:

1. Heat up a small pot on high heat, placing in the water, non-dairy milk, chia seeds, maple syrup, vanilla and cinnamon. You can opt for 1 full cup of non-dairy milk if you prefer it without water. Wait for it to simmer.

2. Once the liquid begins to simmer, lower the heat and add in the oats. Stirring occasionally until you reach your desired consistency.

3. Transfer cooked oats to a bowl and add your toppings.
