Tofu, Avocado Sandwich

This has recently become a lunch staple on the weekends as it's so quick to throw together!

Ingredients:

2 slices of sourdough bread (or bread of choice)

1 avocado

1 block of tofu (optional)

1/2 onion

Hummus

Mustard

Balsamic vinegar

Handful cherry tomatoes

Handful of spinach

Salt/pepper


Instructions:

1. Chop the onion, slice avocado, cherry tomatoes and chop tofu into cubes - set aside.

2. Place tofu cubes on a non-stick pan on high heat with 1 tbsp of olive oil. Let it cook until lightly crispy on all sides. Stir periodically, but try not to stir right at the beginning to avoid it breaking apart. Once it's crispy, set aside to cool.

3. Prepare the sandwich - spread a layer of hummus on both sides, add sliced avocado, tofu slices, onion and cherry tomatoes.

4. Add as much mustard, balsamic vinegar as you would like.

5. Finish by sprinkling a handful of spinach and salt/pepper. Enjoy!
