My Favorite Vegan Burger

This burger is absolute heaven! It's perfect for when you have guests over as it makes 6 - 8 patties depending on how large you want them.


Burger Patty Ingredients:

(Serves 6)

1 tin of black beans (400g)

2 sweet potatoes

1 1/2 cups of cooked brown rice

1/2 cup ground oats

1/2 onion

1/4 cup nutritional yeast

1/2 tsp garlic powder

1 tsp paprika

1 tsp cumin

Salt/pepper


Possible Sides:

Guacamole

Potato fries


Instructions:

1. Preheat oven to 375F or 200C.

2. Start by cooking the rice - you will need to cook a little bit over 1/2 a cup of uncooked rice to have 1 1/2 cups of cooked rice.

3. Cut the sweet potatoes into large chunks and roast in the oven for around 40 minutes until soft.

4. Blend 1/2 cup of oats into a flour-like consistency.

5. Caramelize 1/2 of an onion by sautéing the chopped onion pieces in a tsp of olive oil or water until translucent.

6. Once the rice, sweet potatoes and onions are done cooking, you can combine all of the ingredients together.

7. Start by mashing the black beans into a bowl and then add the rest of the ingredients, including the spices until it is mixed well.

8. Start to form the mixture into 6 - 8 patties.

9. Bake in the oven for 30 - 40 minutes, flipping halfway through. Once the patties look ready, you can add a slice of vegan cheese to the patties. I love using the brand: Violife.

10. Once the patties are done, you can place it on your bun of choice with lettuce, guacamole, mustard/ketchup, vegan cheese, salsa and vegan cream cheese. --- This is my favorite way to make it.


Optional Sides:

1. Guacamole - Mash up 1 - 2 avocados. Add in a few chopped cherry tomatoes, juice of 1/2 a lime and salt/pepper.

2. Potato Fries - Chop up a few normal potatoes into long wedges (the number of potatoes will depend on how many people are eating them). Add around 2 tbsp of olive oil with some salt, pepper, paprika and cumin. Place in the oven for around 30 - 40 minutes, flipping halfway through. Make sure there's only a single layer of fries so that they cook evenly. For the last 5 minutes, change the setting on the oven to top heat only and crank up the heat so that they get nice and crunchy!
